WHAT IS: Is a finely powdered starch, ground from corn kernels. It is used as a thickener for sauces, especially in chinese recipes. It can help "soften"some hard flours; use it to replace 1-2 tablespoons from 150g (5oz.) Plain or hard wheat flour to make delicate pastries or shortbread.
